Too lazy to eat a banana split? How about drinking a banana split? Bananas are great smoothie ingredients so why not bring the split to the smoothie? You can add a scoop of vanilla ice cream if you wish, but it tastes great without it.

Eclair Dessert

Chocolate eclair cakeImage by jcarbaugh via Flickr

Eclairs are one of my favorite comfort foods. Admittedly this special dessert is not the healthiest thing you can ever put into your mouth. In fact by just reading about it you'll likely be able to hear your arteries begin to harden. However, everybody needs a little special something once in a while, right? So here is your comfort food special of the day. Eclair Dessert.

INGREDIENTS:

1 box of graham crackers
2 packages of instant vanilla pudding
3 cups of milk (whole, vitamin D fortified is best)
8-12 ounces of Cool Whip
1 can of chocolate frosting

PREPARATION:

Mix the pudding with the milk until it is well blended. Stir in the Cool Whip. Place a layer of graham crackers in the bottom of a 9 X 13 pan. Cover the bottom with 1/2 of the pudding/Cool Whip mixture. Cover this with the remainder of the pudding mixture. Place another layer of graham crackers on the pudding. Heat the frosting in your microwave until it is thin enough to pour and then pour it over the graham crackers, spread until completely covered. Refrigerate until the frosting is once again firm. **Best if made several hours ahead of the time you'll need it so the graham crackers have time to soften.

There you have it. Eclair Dessert. Now, go take a nap before all that sugar drops you like a hot rock.

FRESH BLUEBERRY COBBLER

I love Blueberries! No question about what dessert I'd chose if given the choice. Here's one of my favorites. I hope you enjoy it too.

Ingredients

  • 1 cup sugar, divided
  • 1 1/2 tablespoons cornstarch
  • 6 cups fresh berries (raspberries, blueberries, blackberries)
  • 1 1/2 teaspoons grated lemon rind
  • 1 cup all-purpose flour
  • 3/4 cup self-rising yellow cornmeal mix
  • 1/3 cup butter, melted and slightly cooled
  • 1 cup milk

Preparation

1. Combine 1/3 cup sugar and 1 1/2 Tbsp. cornstarch in a small bowl. Combine berries, cornstarch mixture, and lemon rind in a large bowl until well blended; spoon berry mixture into a lightly greased 2-qt. baking dish.

2. Combine flour, cornmeal mix, and remaining 2/3 cup sugar in a medium bowl. Stir in butter and milk until blended. Gently spread batter evenly over berry mixture.

3. Bake at 350° for 40 to 45 minutes or until a wooden pick inserted in center of topping comes out clean. Serve warm.

Better get out the napkins for this sweet dish. You're going to need them.
